In the Room
Our Story
Nora Vance opened Ember & Oak in 2019 after fifteen years pulling shots across three Portland neighborhoods. She wanted one small room where the roast, the bake, and the pour all happened under the same roof — and where the person handing you the cup also fired the beans.
The ember is the wood-fired drum roaster in the back. The oak is the counter her father built from a single reclaimed beam, the one you lean on while you wait. We roast three mornings a week, bake every single one, and we have never once sold a flavored syrup we didn’t make ourselves.
No app. No loyalty points. Just good coffee, made by people who remember your order.

Word of Mouth
“The oak latte ruined every other latte for me. That maple note is so subtle you keep going back to figure it out.”
“Walked in at 6:05am, croissant was still warm. Nora remembered I take it black. This is my office now.”
“Bought a bag of the Guji on a whim. Best pour-over I’ve made at home. The whole room smells like roasting day.”
